So how exactly does an Analytical Chemistry graduate end up running a West Indian market stall, let alone writing a Jamaican cookbook? This is a true case of necessity being the mother of invention. Since the age of 6 my parents have owned a market stall selling Caribbean and Continetal foods, so as well as being lucky enough to grow up around all these exotic foods, being of Jamaican heritage, I was taught by my mother how to cook them. Now, a lifetime later, after running the business myself, I was constantly approached by members of the public, burning with curiosity and raring to have a go, but having no clue as to what things are or how to cook them. For example, any type of yam is a root tuber, very similar to a potato and cooked much in the same way, but few people seem to know this. I hope to de-mystify and bring Jamaican food to a wider audience, since I know most people are receptive to new ideas, tastes and cooking experiences.

Through easy to follow recipes, tips and meal suggestions, Mrs Dodd’s Basic Jamaican Cooking: A Rudimentary Guide to Jamaican Cuisine will offer a truly authentic simple guide to Island cooking for everyone, from the beginner to the seasoned food enthusiast.

Inside the book:

1. Introduction - Explains to the user why I have written this book and explores my own thoughts on Island cooking. This is immediately followed with suggestions for handy utensils and condiments the user may need.

2. Choosing Ingredients: A Guide - Shows full colour photographs of major ingredients, such as yams, jerk seasonings and ackees, and recommends ‘best buys’ on items where there is a choice. Gives full ingredients of products where appropriate for the outcome of the recipe flavour and composition.

3. The Basics - Explains in user-friendly detail such rudimentary tasks as how to boil a yam, make spinners (Jamaican dumplings), boil plain rice, roast a breadfruit or make steamed pumpkin.

4. Recipes - Presents step by step instructions on how to produce dishes such as Ackees & Saltfish (Jamaican national dish), Escovitch Fish, Pumpkin Soup or Chicken, Rice & Peas using authentic methods. Also each recipe ends with numerous serving suggestions.

5. Vegetables & Non-meat - A selection of recipes which are suitable for vegetarians or vegans.

6. Sweets & Drinks - Two easy dessert recipes and some very simple drinks & punches.

7. Complete Meal Suggestions - Suggests ways of putting together foods to form a complete meal for vegetarians and non-vegetarians alike.
