Feb 12, 2012A cookbook should be more than a slick paper collection of recipes. It should celebrate life. A true cookbook is a collection of meals to be shared…memories yet to be made…recipes to be hand copied and passed around the family for years to come. Betty Lynch has created a true cookbook with Back to the Table with My Country Kitchen. Like a friend handing over her prized recipe, telling you its history, Betty begins each dish with a personal message. Chocolate Gravy… This is a true Southern dish. Make a pan of biscuits, crumble the biscuits in a bowl and top with Chocolate Gravy. Add a pat of butter and it is yummy! This is my personal comfort food. When my mother comes to visit us, I always ask her to make me some chocolate gravy for breakfast. Yes, I can make it, but it does not taste the like my dear mother’s. What is it about mom’s cooking that makes you feel so loved? I’ve lived in the South all my life and never eaten chocolate gravy, but how could I not cook it after reading... More > that? And let me tell you…it is now my personal comfort food as well. I dropped a bite on the floor…and almost went after it. Betty grasps the concept of family in the modern world. Some days there just isn’t time to make a complicated dinner from scratch. There are recipes that can be whipped up to feed the soccer team by the time they get changed. There are slow cooker meals that meet you at the door at the end of a long day. There are dishes using the freshest ingredients…straight from the garden or farmers’ market. There are recipes for breakfast, lunch, dinner, dessert, and even a party. I think that’s why I love it so much…there’s something for everybody. As good as the recipes are there’s still more. Betty shares the story of the making of the cookbook with us. We get a behind the scenes look as Editor Kim Emerson tries each recipe…and learns a lot about cooking in the process…like…how do you fold a raw egg. I’m still smiling about that one. Overall…I’d say Betty accomplished what she set out to do. She has provided a collection of recipes that help you save money, prepare easy meals, help your family slow down, and spend at least thirty quality minutes together every day. Well done!< Less
Dec 27, 2009This cookbook does not only give you a bunch of easy to make, delicious recipes, but also has pages full of charts (from apples to vegetables and from spcies to cooking times) plus it has a very handy cooking dictionary. Betty's love for food, food preparation and family meals shines through in this book filled with personal tips and comments by the Author.
