I don't know who you are, Tim Milk but you better go back and read again. You don't set cream out to let "butter" raise.

Sam's Homestead is a valuable historic account of a family's settlement in the northern Midwest, from the later 1800s to the present. In straightforward language it tells in minute detail what frontier life was like, right down to the pantry room where bowls of cream were set on open shelves to let the butter rise. There are encounters with wild bears, shortages, and long cruel winters before the time of roads or bridges. I recommend that historians who are researching this subject take a good look at this fascinating account.
