Spanish cuisine is not Mexican or South American. It’s European and Mediterranean in nature taking full advantage of native citrus fruits, olives and their oil complimented with New-World ingredients, like peppers and potatoes. Spanish cuisine has been influenced by Islamic North Africans who conquered most of the Iberian Peninsula for hundreds of years. Meatballs, kebabs and gazpacho were introduced by the Muslims. As if to spite the Muslims after they were forced back to Africa, the Spanish eat as much pork as they can, like pork with lemon sauce, olives & paprika, Madrid-style pork chops, and thinly sliced acorn-fed Iberian ham. Soups and stews are popular in Spain. I provide you the recipes for Galician stew, beef & tomato stew, Spanish pea soup, Catalan beef stew and, of course, gazpacho.
