Spanish cuisine is not Mexican or South American. Soups and stews are popular in Spain. I provide you the recipes for Galician stew, beef & tomato stew, Spanish pea soup, Catalan beef stew and, of course, gazpacho. Snacks in Spain are called “tapas,” and I present you with recipes for some of the most popular - potato croquettes, Spanish omelet, crispy shrimp fritters and pan-grilled shrimp, among others
