Hymn tunes written in traditional SATB texture are harder to play on keyboards than many realise.
At an organ, the Soprano and Alto parts are taken by the right hand, the Tenor by the left hand and the Bass by the pedals. However the necessary skills in pedalling plus independence of left hand and feet are well above beginner level.
Playing SATB texture on manuals only, or on a single-keyboard instrument without pedals, is also challenging due to wide spacing between the Bass and Tenor parts. Intervals greater than an octave can't be readily played by the same hand, so it's necessary to share the Tenor part between the hands. This too is not a beginner skill.
These 3-part arrangements keep the original Soprano and Bass lines, but collapse the Alto and Tenor parts into a new single inner voice which is then played by the right hand. The result keeps the feel of the original while being much easier to play using manuals only.
