We all like to make the effort to serve our friends interesting food when they spend their holiday with us. These collected recipes offer a variety of foods over a one or two week period. Most recipes are very quick and easy. Some take a little more time but are not difficult. We live in the tropics and lunch is often the most relaxed and social meal, there are more lunch dishes than is usual so you can serve two or three dishes for larger or longer gatherings, and most will work as starters or for a dinner. This isn’t a cookbook for beginners, quantities for ingredients are stated if they are important; but these and all others can be varied to taste, the number of guests and experience. You don’t need me to tell you how to make a roux, caramel or vinaigrette, so detailed instructions are not given.
