Walking around Italy with Debora

Dear readers and cooking enthusiasts I am Debora, born in Bergamo in 1971, the place where it all began: the passion for cooking thanks to the teachings of my mother and my maternal grandmother, respect for the ingredients and attention to waste, sharing within the family so dear and precious to me. These are the ingredients that have characterized my growth: passion, dedication, consistency, respect, love, sacrifice, savings. For me the main ingredient is respect for the ingredients in all phases of processing, keeping their peculiarities unchanged, and for the people with and for whom I prepare my dishes. Love, essential from the respect without which nothing can coexist because for me cooking means demonstrating affection and attention, it means dedicating an intimate space of myself revealing the passion that I jealously guard within me and I share it with all those who enter into harmony with it. My parents taught me dedication and perseverance so that I could confidently achieve my goals, commit myself to improving and learning more and more. Thanks to sacrifice, I managed to reconcile work and family, studies that led me to obtain diplomas in the sector of baked products such as pizzas, focaccias, bread, cakes... And finally, the savings linked to the quantities of products used, minimizing waste as much as possible, always reminding myself that food is life. My mother often tells me about when, while still little, she would cycle around the bakery of her parents, my grandparents, among enormous bags of flour, wooden and metal shovels that were used to bake every delicacy, mixers and molds for the bread. Every morning the scent wafted through the air and welcomed the new day. It was the 1950s. When I was born the bakery no longer existed, only my grandmother and obviously my parents remained and it was with them that I started messing around in the kitchen for fun, imitating and following the instructions my grandmother gave me when she prepared the dishes for the Sunday, when the whole family gathered for lunch. That passion has grown with me, year after year, perfume after perfume, leaving indelible memories in my memory that still take me back to those times.
