Beth Spencer loves nothing more than figuring out what’s for dinner and then spending all day cooking it. She learned the basics young, at the elbows of two superb cooks, her mother and grandmother. Hearty soups, stews, pastas, and homemade breads are among her favorites along with desserts—no meal is complete without a happy, sweet ending. In 2011, urged by her family to write up her favorite recipes, she published, “Pea Soup: Recipes for Body, Mind, and Spirit from a ‘Kitchen Table Gourmet’”, a collection of delicious, real-food recipes, from appetizers to desserts and everything in-between. Then in 2012 a companion cookbook, “Turtle Soup, Recipes for the Specific Carbohydrate Diet ™ from and SCD Mom” (gluten-free) was born—tummy-friendly and flavorful recipes developed especially for the IBS and IBD community.
