Bronzed Brews – Home Brewing Old Australian Beers, was arguably the first time Australian historical beer recreations had been documented. During the editing a lot of content, including some of... More > my favourite bits, ended up on the cutting room floor because of incomplete information. I’m ruthless when editing! 6 O’CLOCK Brews is a continuation, extension and amplification of Bronzed Brews, (which covered the history of Australian brewing, ingredients and processes from the early 19th century to the 1970s, it included 42 recreation recipes.) I located old brewing records from Tasmania, Western Australia, N.S.W. and South Australia, plus some from the U.K. After being granted the rare privilege of access to Cooper’s Brewery archives, I am especially pleased to be able to document the evolution of Cooper’s beers over 100 years or so.< Less

So what is Bronzed Brews all about? Well, way back in January 2009, after doing some initial research for the Australian Sparkling Pale Ale style for Jamil Zainasheff on the Brewing with Style show... More > on The Brewing Network, I wondered why there was so little written about historical Australian beer. Bronzed Brews seeks to redress this knowledge gap being the product of over 4 years of research, across Australia and the U.K. Over this period I tracked down the details of ingredients and processes and discovered the actual brewing books and journals, then derived the recipes. The result being a book which blends brewing history, ingredients, and processes, with a selection of 42 Australian historical beers recreated as home brew recipes, which cover ales, stouts, and surprisingly, even a few lagers, from 1844 to 1975. Most of the recipes in the book have been successfully trialled, providing a basis for further experimentation to produce some unique home brews.< Less
