There are two methods for melting the chocolate and butter. The first one is in a bain-marie, or a double boiler, which needs to be set so the bottom of the upper bowl containing the chocolate and butter does not touch the water in the lower bowl. The other method is direct melting in a saucepan over low heat, which needs to be performed carefully, so the ingredients do not burn.
