Chow Winkler has been cooking since he was knee-high to a small cactus, working on ranches in Texas and New Mexico and recently, Swift Enterprises. While he enjoys teasing Bud Barclay about serving heaping helpings of Rattlesnake Stew, Chow has a recipe for that. This book features more than two dozen of his favorites from the range to the kitchens of Enterprises from the aforementioned Rattlesnake Stew to Prairie Dog Hash and Bison Tacos. Of course, Chow understands that not all the ingredients may be available to everyone (or, they may not want to skin an armadillo) so he's included "tenderfoot" versions of many of the recipes in the book. There are even some meatless recipes he has developed in recent years to meet the needs of a wider variety of people, along with his favorite desserts. Written in Chow's own unique method of speaking, it is an unabashed peek into Chow's kitchens over the years. As Chow says, "Bone Apple-tight!"
