Founder and principal of EDG Learning and EDG Learning Press, Eric is a consultant and educator specializing in instructional design, education and training, and knowledge management. He is also an avid camper and Scouting volunteer. Having a son with Type 1 diabetes and nephews requiring gluten-free meals that are all involved in Scouting and other outdoor activities inspired Eric to write his first cookbook. Other books helping families to deal with food sensitivities as well as Type 1 are in development now.
