6 O’CLOCK Brews is a continuation and amplification of Bronzed Brews, and True Blue Brews. The Second Edition is a major upgrade driven by data from the South Australian Brewing Co. archives. It provides insights into West End and Southwark beers, complementing the story of over a century of Cooper’s Sparkling Ale and Best Extra Stout. The book also traces the 70-year evolution of Australian Bitter and the launch of the world’s first Adelaide-brewed Guinness Export Stout – GXS. In Chapter 2, the hops section has been revised to include hop growing in the Ovens Valley, focusing on the different varieties grown over the years to help with the interpretation of brewing records. Also incorporated is the history of Carlton and United Breweries’ investments in the breeding of Pride of Ringwood and their subsequent development and application of hop extracts. A new chapter, Down with Guinness! – then you’ll feel better, has the story of the arrival of Australian-brewed Guinness Export Stout. The rest of the chapters have been thoroughly reworked to include the results of further research, and now there are 72 historic Australian recipes for you to brew.
